A blend of the heritage Mission trees that came with the ranch and the Frantoio and Arbequina we planted beside them. Grown in Arroyo Grande, picked by hand, and milled in Paso Robles the same day. A professional tasting panel graded it extra virgin with no defects: green and fruity, with a bitter edge and a peppery finish.

We use it to finish almost everything: drizzled over burrata and ripe tomatoes, grilled fish, roasted squash or a bowl of white bean soup. And on warm bread with a pinch of flaky salt, always.
